Choc Chip Coconut Oat Bars
My children love Nature Valley Bars and Flahavans chocolate chips but they’re expensive. This is the closest I’ve ever gotten to making similar at home.

Based on a Mary Berry recipe for Coconut Crackerjacks, this recipe makes shallow bars that are a harder consistency than flapjacks, think like Flahavans ones you buy, or similar to Nature Valley bars. We made 2 batches in a week and they disappeared!
Choc Chip Coconut Oat Bars Recipe
Ingredients
150 g of baking spread (or you can use butter straight from the fridge)
150 g Demerara sugar
150 g porridge
25 g desiccated coconut
50 g chocolate chips. (You can use milk or dark, or more that this if you like!)
Method
Preheat oven to 160° or fan 140°
Grease a Swiss roll tin. The one I used was 28 x 18 cm
Next cream the spread or butter and sugar together in your mixer.
Then add your porridge, your coconut and work them together. I used the back of a wooden spoon for this
Add your chocolate chips and distribute them evenly
Next press this (again with the back of a spoon) into your Swiss roll tin, then bake it in the preheated oven for about 40 minutes. They will look golden brown when done.
You need to leave it to cool in the tin for about 10 minutes and then mark into either squares or fingers.
I went with fingers! Leave to cool in the tin, then take it out and store in an airtight container. Enjoy!
