This is a pie that’s like a big potatoey fishcake, as opposed to a creamy one. The fish and potato intermingle. It’s a tasty one. We served with wilted spinach and baked beans (I knew I’d have refusals), peas are a perfect accompaniment.
Cod & Potato Pie
You’ll need:
6 potatoes, peeled and halved
4 cod fillets, cut into 2cm pieces
3 spring onions, finely chopped
1 large egg
1/2 tablespoon horseradish sauce
2 tbsp butter
50g mature cheddar, grated
Here’s how:
Pre-heat oven to 170C
Boil potatoes, drain and mash, season.
Grease a dish (I used the one I make lasagne in) with butter
Gently stir in the (raw) cod pieces, spring onion, egg and horseradish sauce into the mash
Put potato and fish mix in the prepared dish, dot the top with remaining butter and sprinkle with cheese
Bake for 20-25 minutes
