Better Breakfasts and a Healthier Start with Simply Homemade

Did you ever look at what you’re eating for breakfast and sort of, well shudder a little? The most important meal of the day gets so routine in the morning rush. Cereal, milk, toast. Brown bread and marmalade and a cuppa. Boring.

Our house is a cereal house during the week, we try to keep on the low sugar side of things with Weetabix, Shredded Wheat and Rice Krispies, but Wheaties (the Aldi version of Shreddies) and Fruit and Fibre are favourites too. Coco Pops and other sugary cereals are reserved for holidays and only after “proper breakfast”.

We don’t have time in the morning to do a lot to shake up the breakfast menu, but at weekends we try to up things a notch, although often the kids request their cereal while they’re waiting.

Porridge with Fruit

This feels like a treat and not healthy at all, we’re big porridge fans, especially with some blueberries on top and some make-up (maple) syrup as requested by my favourite four-year-old.

 

Overnight Oats

I use equal amounts of milk (almond milk is very good, but cow’s milk is fine), greek yogurt (for a treat the Glenisk Vanilla one is fab) and regular porridge. Put them together in a container with a lid, (real food bloggers use kilner jars, I use a leftover Chinese takeaway container) and leave overnight. In the morning add berries. The kids think it’s dessert for breakfast. I can’t find a photo. I know I have one somewhere.

 

Eggs

You’ll never go hungry if you have eggs. Poached are our favourite but they are very much the preserve of weekend breakfasts in this busy house, on wholewheat toast and sometimes with sausages and beans or a rasher. These baked eggs with chorizo are also delicious, I must make them again soon.

 

Banana Pancakes (with only three ingredients)

Now, let’s be frank, these are are second favourite pancakes around here, the blueberry ones are infinitely better, but these are good. Some versions don’t contain flour but if you want them fluffy the flour is a necessity.

Avocado on Brown Toast

My sister introduced me to this and I love it with a squeeze of lemon juice or some black pepper. The kids will not touch it but that’s OK with me, it’s all MINE. Delish.

These can be made the night before and heated in the microwave, or have them prepared the night before and take them from the fridge to the oven in the morning. Recipe HERE.

Banana Bread

This was healthy in 2003 when fat was the enemy and sugar wasn’t as evil as it is now. I still say it’s healthy, and really, when it comes down to it, it’s CAKE for breakfast, and you couldn’t argue with that, could you?
