Banana Pancakes with Three Ingredients 

Pancakes. My favourite breakfast. Well, blueberry pancakes are. But two weekends lately the grocery shopping hadn’t been done by Sunday morning so there were no blueberries. I panicked. I cried. I surveyed the fruit bowl. I’d tried banana pancakes before, 2 ingredient ones that my sister loves, but frankly they taste more like banana omelettes (Sorry Grá). So, to make them less like omelettes I added flour. Only a little, but enough to make them like proper fluffy pancakes.

Three Ingredient Banana Pancakes

Take three ingredients.

2 small bananas

2 eggs

2 tablespoons of plain flour

Bung them all in the blender/food processor until they look all foamy. Like this picture.

Pour batter onto a medium hot frying pan with a little heated oil or butter and fry until they set, then turn over and cook on the other side.

Makes LOADS, but the kids will eat them all anyway.

Drizzle with maple syrup, or golden syrup with some fruit on the side or even Nutella mmm!
