I’ve seen a few mug cakes being shared on facebook over the last few months but bm ever really took them seriously.
Then tonight I got home to cranky kids and my husband was heading out for the evening. I needed cake, but not to have to wash up.
That was when I had a flash of inspiration and googled “mug cake”. Babble.com produced a selection but I settled on this one. It doesn’t sound like it’ll work but it does.
The cake is better than I expected but without butter it lacks, well butteriness, which is in my opinion one of the best things about cake. However, it’s super chocolatey and very tasty. The melted chocolate on top makes it and I suspect a blob of whipped cream or some ice-cream would be fantastic too.
Here’s how to make it:
Ingredients
1 egg
1/4 ie 0.25 cup icing sugar
1 or 2 tablespoons cocoa depending how chocolatey you want it. I went with 1.5 tablespoons.
Enough Milk chocolate chips to spread on top
Crack the egg into a mug (I used a wide one but not too big) and add the icing sugar and cocoa. Mix well with a small whisk until the mixture is smooth and glossy.
Microwave on high for 30 seconds. Then add 10 second increments watching to make sure it hasn’t spilled over. Ours was done in 50 seconds in a 900W microwave.
Sprinkle chocolate chips on top immediately and they’ll melt into the cake.
