A Week in Dinners #8

Thanks to everyone who took part in my Week in Dinners linky– I was over the moon with the response. It’s still open if anyone else wants to join in and I will do a roundup of all posts and reader contributions next week (yeah, I know, I said that last week, cut me some slack!)

I’m also a week behind sort of, so this “Week in Dinners” – our first full working week. On work days the kids bring their dinners to their childminder’s house so I cook the day before or send freezer stocks, this means that they don’t always eat the same things on the same days as we do, or they might have different dinners than one another. My priority is to make sure that they eat. Our adult workday dinners can be hit and miss, especially if one of us working late or has had a big lunch.

So, here’s another week in dinners from the Bumbles of Rice House.

Monday
Kids: Sausage, beans mash at childminder’s. L had fish pie from freezer batch.
Us: Salad: prawns, peppers, leaves, tomatoes, sweet chili dressing

Tuesday
Kids: Spaghetti Bolognese from the freezer batch
Us: I ate out at lunchtime for a work birthday lunch so just had a sandwich.

Wednesday
Meatballs in homemade tomato sauce with pasta
I was off work on parental leave today so I made today’s and tomorrow’s dinners and some Quick Tomato Soup for lunch.

Thursday
Kids: More meatballs and pasta
Us: Vegetable red curry and basmati rice

This is where batchcooking pays off.

Friday
Kids: Vegetable red curry and rice (our childminder reported that this was grudgingly eaten)
Us: Toasties.

Do I need to say more? Toasties, hot and tasty.

Saturday
Penne pasta with chicken, sweetcorn and sour cream– I mentioned this dish before, it’s one from the Paul Flynn Lidl cookbook and is a true 10 minute dinner, but is very tasty and enjoyed by all.

Sausage and Spinach Lasagne

I’m delighted to say that the Week in Dinners linky has given me lots of dinner inspiration- once I read about the sausage and spinach lasagne served in the Office Mum house I had to try it. I made this on Sunday morning and did the final cooking slot when we came home, it was very tasty, although the boys looked it at very suspiciously and had to be encouraged to try it. The adults of the house really enjoyed it and I can safely say that we will make it again.
