Smarties Cookies

I’ve written about the chaos that can ensue when I bring my children to the supermarket, the running up and down the aisles and the general mayhem. One of the things that they beg for are the bags of cookies in the bakery aisle as you go in, the smell of them really appeals and they make a beeline for them. (or the cocktail sausages depending on which smell is stronger).

This recipe recreates the supermarket ones and that I printed from somewhere with no links on it so I have no idea who to credit, but if you know where it came from let me know.

They’re easy to make and very tasty and would be a hit at bakesales or birthday parties. Better still, they’re pretty child friendly to make, so you can get the kids involved, if you have the energy.

Smarties Cookies
Ingredients
100g butter (room temp)
100g light brown sugar
1 tbsp golden syrup
150g self raising flour
85g mini-smarties (the smaller smarties work better)

Preheat oven to 180C.

Cut the butter into cubes, then put it in the mixer bowl with thebrown sugar. Beat until it’s creamy and paler (about 4 or 5 minutes on high).

Add the golden syrup and turn the mixer back on til it’s beaten in,  then add half the flour and mix it in slowly until it’s well mixed in.

Stir in (mini)smarties with the remaining flour using a wooden spoon and then the work the dough between your fingers, to make it into balls.

Divide into 14 balls, Place them, well spaced apart, on two baking sheets, you don’t need not flatten them nor grease the trays.

Bake your cookies for 10-12 mins, until they are pale and golden on the edges. Cool on a wire rack and WAIT 🙂
