The title lies and the lawyer and perfectionist in me feels bound to come clean. Despite being called a traybake there is absolutely no baking involved in this recipe, it’s a melt and mix job. Better still it’s a “melt it all together recipe” with no precariously positioned bowls on top of saucepans of water and this makes it very, very easy. It’s also very chocolatey and buttery and very moreish.
This recipe is from Nigella’s website and is a community recipe as opposed to Nigella’s own. Since it’s a melt and make recipe you can make whatever shape you like so it can become a birthday cake, buns, whatever you wish. It’s a good one for cake sales, bake offs, field days, fetes and birthday parties. My shot above is from Ciaran’s party, hence the lack of styling. A new one will come soon, honest.

Malteser Tray “Bake”/ Malteser Slices
200g milk chocolate
3 tbsp golden syrup
225g finely crushed digestive biscuits
First, line a swiss roll tin (that’s what I used) with parchment/baking paper. Crush the digestives- I am lazy and usually blitz them until smooth in the food processor but if you like you could put them in a ziploc bag and bash
them till they are reduced to crumbs.
Put the butter, chocolate (not the Maltesers yet) and golden syrup into a saucepan and melt over a low heat. When melted add the crushed biscuits and stir the Maltesers. Mix it all together and then pour it into the tray that you lined earlier. Let cool then put in the fridge to set.
To decorate you could add sprinkles when still melty (the boys love sprinkles on anything) or for a classier look drizzle a mix of dark and white or milk chocolate on top.Cut into squares before serving, I think they are best cut at room temperature with a warm knife as they tend to break unevenly otherwise.
